Step-by-step instructions

  1. Cook the bacon in a large pot until crisp. Transfer to a paper-towel-lined plate, leaving about 2 tablespoons of fat in the pot.
  2. Cook onion in the bacon fat for 6 minutes. Add garlic for 30 seconds, then stir in flour for 1 minute.
  3. Gradually add broth while stirring. Add potatoes, bring to a simmer, and cook for 18 to 22 minutes until very tender.
  4. Mash some of the potatoes in the pot. Stir in milk, sour cream, half the cheddar, and half the bacon. Warm gently and season. Serve with remaining toppings.
