  • 4 cups baby spinach
  • 1/2 cup (120 mL) cream, optional
  • Salt, pepper, and Parmesan

Step-by-step instructions

  1. Brown sausage in a large pot, breaking it into bite-size pieces. Drain excess fat if needed.
  2. Add onion and carrots. Cook for 7 minutes, then add garlic and Italian seasoning for 30 seconds.
  3. Add tomatoes and broth. Simmer for 15 minutes.
  4. Add tortellini and cook according to package timing. Stir in spinach and optional cream during the final 2 minutes. Season and serve with Parmesan.
