  • 1 tbsp lime juice
  • Salt, pepper, and sliced green onion

Step-by-step instructions

  1. Melt butter in a soup pot. Cook onion, bell pepper, and celery for 8 minutes. Add garlic and smoked paprika for 30 seconds.
  2. Add potatoes and broth. Simmer for 12 to 15 minutes until the potatoes are almost tender.
  3. Add corn and simmer for 6 minutes. Blend about one-third of the soup and return it to the pot.
  4. Stir in milk and warm gently. Add lime juice, salt, and pepper. Garnish with green onion.
